Instructions
- Heat olive oil in a skillet over medium heat.
- Add chopped red onion and sauté for 3-4 minutes until translucent.
- Add chopped spinach and diced tomato, stirring gently until spinach wilts.
- In a mixing bowl, whisk together eggs, salt, black pepper, and dried oregano.
- Pour the egg mixture over sautéed vegetables, stirring gently as it cooks.
