Description

A delightful chocolate cake roll filled with whipped cream and cherries, drizzled with ganache, perfect for special occasions.


Ingredients

  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1/4 cup milk
  • 1 cup whipping cream
  • 2 tbsp powdered sugar
  • 1 cup cherries, pitted and halved
  • 4 oz semi-sweet chocolate, for ganache
  • 1/2 cup heavy cream, for ganache
  • Chocolate curls and additional cherries for garnish


Instructions

  1. Preheat oven to 350°F (175°C) and prepare a jelly roll pan with parchment paper.
  2. Sift together flour, cocoa powder, baking powder, and salt into a bowl.
  3. In another bowl, beat eggs and sugar until light and fluffy, then add vanilla extract and milk.
  4. Gradually fold in the dry ingredients to form a smooth batter.
  5. Spread the batter evenly in the prepared pan and bake for 12-15 minutes.
  6. Prepare a powdered sugar-dusted kitchen towel.
  7. Invert baked cake onto the towel and roll it up from the short side; let cool completely.
  8. Whip cream with powdered sugar until soft peaks form and spread over the cooled cake.
  9. Sprinkle halved cherries on the whipped cream and gently roll the cake back up.
  10. Refrigerate for at least an hour to set.
  11. Prepare ganache by heating heavy cream and pouring it over chopped chocolate; stir until smooth.
  12. Drizzle ganache over the chilled cake roll and garnish with chocolate curls and cherries.
