- 1 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/4 tsp salt
- 3 large eggs
- 1 cup granulated sugar
- 1 tsp vanilla extract
- 1/4 cup milk
- 1 cup whipping cream
- 2 tbsp powdered sugar
- 1 cup cherries, pitted and halved
- 4 oz semi-sweet chocolate, for ganache
- 1/2 cup heavy cream, for ganache
- Chocolate curls and additional cherries for garnish
Instructions
- Preheat oven to 350°F (175°C) and prepare a jelly roll pan with parchment paper.
- Sift together flour, cocoa powder, baking powder, and salt into a bowl.
- In another bowl, beat eggs and sugar until light and fluffy, then add vanilla extract and milk.
- Gradually fold in the dry ingredients to form a smooth batter.
- Spread the batter evenly in the prepared pan and bake for 12-15 minutes.
- Prepare a powdered sugar-dusted kitchen towel.
- Invert baked cake onto the towel and roll it up from the short side; let cool completely.
- Whip cream with powdered sugar until soft peaks form and spread over the cooled cake.
- Sprinkle halved cherries on the whipped cream and gently roll the cake back up.
- Refrigerate for at least an hour to set.
- Prepare ganache by heating heavy cream and pouring it over chopped chocolate; stir until smooth.
- Drizzle ganache over the chilled cake roll and garnish with chocolate curls and cherries.
