- 1 pound Canadian bacon, diced
- 6 English muffins, split and cut into 1-inch pieces
- 8 large eggs
- 2 cups whole milk
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon paprika
- 2 teaspoons chopped fresh parsley
- 1 cup hollandaise sauce
Instructions
- Preheat your oven to 375°F (190°C).
- Coat a 9×13-inch baking dish with non-stick cooking spray.
- Layer half of the diced Canadian bacon at the bottom of the dish.
- Scatter half of the split English muffin pieces over the bacon.
- Repeat the layers with the remaining bacon and muffin pieces.
- In a large mixing bowl, whisk together the eggs, whole milk, onion powder, garlic powder, salt, black pepper, and paprika.
- Pour the egg mixture evenly over the layers in the baking dish.
- Cover tightly with plastic wrap and refrigerate for at least 2 hours or overnight.
- Uncover the casserole, sprinkle paprika on top, and bake for 35 to 40 minutes until fully set and golden brow.
- Prepare hollandaise sauce according to package or homemade recipe and drizzle over the casserole before serving.
- Garnish with fresh parsley and serve warm.
Notes
For a vegetarian option, replace Canadian bacon with sautéed spinach and mushrooms. You can also add fresh herbs or seasonal vegetables for added flavor.
