Ingredients

  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • Salt and pepper to taste
  • 3 cups mashed potatoes (prepared from about 3 large potatoes)
  • 2 tablespoons butter
  • 1/4 cup shredded cheddar cheese (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a skillet over medium heat, brown the ground beef for 6-8 minutes, then drain excess fat.
  3. Add chopped onion and minced garlic, and cook until onions are translucent (3-4 minutes).
  4. Stir in the frozen mixed vegetables and cook until heated through.
  5. Add tomato paste, beef broth, Worcestershire sauce, salt, and pepper; mix well and let simmer for 5-7 minutes until slightly thickened.
  6. Spread the beef mixture evenly in a baking dish.
  7. Top with prepared mashed potatoes, creating a smooth layer over the beef.
  8. Dot with butter and sprinkle with cheddar cheese if using.
  9. Bake in the oven for 20-30 minutes until golden and bubbly.
  10. Allow to cool for 5 minutes before serving.
