Instructions
- Rinse strawberries, remove tops, and finely chop.
- Mash strawberries in a mixing bowl until jam-like consistency is formed.
- Add chia seeds and honey to the strawberry mixture, whisking until combined.
- Let the mixture sit for 10-15 minutes to thicken.
- Line a baking dish with parchment paper and form the mixture into medallion shapes.
- Freeze the bites for 30 minutes.
- In a microwave-safe bowl, combine chocolate chips and coconut oil, heating in 20-second intervals until melted and smooth.
- Dip each medallion into the melted chocolate and place back on the parchment-lined tray.
- Freeze for an additional 10-15 minutes until chocolate sets.
- Allow bites to sit for 5 minutes at room temperature before serving.
