Description

Ingredients

  • 2 cups fresh strawberries, finely chopped
  • 2 tablespoons chia seeds
  • 1 tablespoon honey
  • 1/2 cup dark chocolate chips
  • 1 teaspoon coconut oil


Instructions

  1. Rinse strawberries, remove tops, and finely chop.
  2. Mash strawberries in a mixing bowl until jam-like consistency is formed.
  3. Add chia seeds and honey to the strawberry mixture, whisking until combined.
  4. Let the mixture sit for 10-15 minutes to thicken.
  5. Line a baking dish with parchment paper and form the mixture into medallion shapes.
  6. Freeze the bites for 30 minutes.
  7. In a microwave-safe bowl, combine chocolate chips and coconut oil, heating in 20-second intervals until melted and smooth.
  8. Dip each medallion into the melted chocolate and place back on the parchment-lined tray.
  9. Freeze for an additional 10-15 minutes until chocolate sets.
  10. Allow bites to sit for 5 minutes at room temperature before serving.
