Description

A delicious and simple quesadilla filled with shredded chicken, crispy bacon, and melted cheese, smothered in ranch dressing.


Ingredients

  • 4 large flour tortillas
  • 2 cups cooked chicken (shredded)
  • 8 slices bacon (cooked and crumbled)
  • 2 cups Mexican cheese blend (shredded)
  • 1/2 cup ranch dressing
  • 1 cup tomatoes (diced)
  • 1/4 cup red onion (finely chopped)
  • 2 tablespoons fresh cilantro (chopped)
  • 2 tablespoons butter (for cooking)


Instructions

  1. Mix shredded chicken with ranch dressing in a mixing bowl until well coated.
  2. Add crumbled bacon, diced tomatoes, red onion, and cilantro; stir until evenly distributed.
  3. Lay one tortilla flat and sprinkle cheese on one half, spoon chicken mixture over cheese, and add more cheese on top.
  4. Fold the tortilla in half over the filling.
  5. Heat butter in a skillet over medium heat, place the folded quesadilla in the skillet and cook for 2-3 minutes on each side until golden brown.
