Ingredients

  • 2 packages instant ramen noodles (discard seasoning packets)
  • 2 large eggs
  • 2 cups fresh spinach
  • 4 cups chicken broth
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 green onions, thinly sliced
  • Black sesame seeds, for garnish


Instructions

  1. Bring a pot of water to a gentle boil and carefully lower in the eggs. Cook for 6-7 minutes for soft-boiled consistency, then transfer to ice water and peel.
  2. In a large pot, bring 4 cups of chicken broth to a simmer, adding soy sauce and sesame oil. Stir to combine.
  3. Add frozen dumplings to the broth and cook for 8-10 minutes until heated through.
  4. Add instant ramen noodles to the pot and cook for 2-3 minutes until softened.
  5. Toss in fresh spinach and cook for 1 minute, until wilted.
  6. Assemble the bowls with noodles, dumplings, and spinach, then ladle hot broth over. Top each bowl with half a soft-boiled egg, green onions, and black sesame seeds.
