- 1 (15-ounce) can black beans, rinsed and drained
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 red onion, thinly sliced
- 1 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
Instructions
- In a large bowl, combine the rinsed and drained chickpeas and black beans.
- In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and black pepper.
- Pour the dressing over the beans and toss gently to coat.
- Add the sliced red onion, crumbled feta cheese, and chopped parsley, and mix well.
- Cover the bowl and refrigerate for at least 30 minutes to allow flavors to meld.
- Serve chilled or at room temperature, giving a gentle toss before serving.
Notes
