Instructions

1. Remove steak from fridge 30–45 minutes before cooking.

2. Pat dry with paper towels. Season both sides with salt and pepper.

3. Preheat skillet over medium-high heat until very hot.

4. Add oil and sear steak for 2–3 minutes per side.

5. Add butter, garlic, and herbs. Baste for 1 minute.

6. Remove from heat. Let rest 5–10 minutes.

7. Slice thinly against the grain and serve.
