- 1 ½ cups all-purpose flour
- ¼ cup granulated sugar
- ⅓ cup unsalted butter, melted
- ¼ teaspoon sea salt (for crust)
- 200 g dark chocolate, chopped
- ¾ cup heavy cream
- 1 tablespoon unsalted butter
- ¼ teaspoon vanilla extract
- 1 cup fresh cranberries
- ¼ cup orange juice
- 2 tablespoons honey
- 1 teaspoon orange zest
- Pinch of sea salt (for topping)
Instructions
- Preheat the oven to 350°F (175°C).
- In a medium bowl, mix together the flour, sugar, and sea salt.
- Add the melted butter and mix until crumbly. Press into an 8×8 baking dish.
- Bake for 12 to 15 minutes until lightly golden.
- For the ganache, heat the heavy cream until simmering, pour over the chopped dark chocolate, and whisk until smooth.
- Stir in 1 tablespoon unsalted butter and vanilla extract.
- In a saucepan, cook the cranberries with orange juice, honey, and orange zest for 6 to 8 minutes until they burst and thicken.
- Pour the chocolate ganache over the baked crust, then spoon the cranberry mixture on top and swirl.
- Return to the oven for another 8 to 10 minutes.
- Let cool on a wire rack for at least 30 minutes, then chill in the refrigerator for 20 minutes.
- Cut into 12 equal bars and serve.
