- 8 oz spaghetti or fettuccine
- 1 cup ripe tomatoes, diced
- 1 cup heavy cream
- 4 cloves fresh garlic, minced
- 2 tbsp extra virgin olive oil
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Bring a large pot of salted water to a boil, then cook the spaghetti or fettuccine according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until golden brown.
- Add the diced tomatoes to the skillet, seasoning lightly with salt and pepper, and simmer for about five minutes.
- Lower the heat and stir in the heavy cream until well combined, allowing the sauce to thicken.
- Toss the cooked pasta with the sauce, ensuring every strand is coated, and garnish with fresh basil before serving.
Notes
For added flavor, top with grated Parmesan cheese or incorporate seasonal vegetables.
