Ingredients

- 1 cup quinoa
- 2 cups water or vegetable broth
- 1 large apple, diced
- 1/2 cup dried cranberries
- 1/4 cup chopped walnuts (optional)
- 1/4 cup feta cheese (optional)
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey or maple syrup
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water for a couple of minutes.
- In a medium saucepan, combine rinsed quinoa and water or vegetable broth; bring to a boil.
- Once boiling, reduce heat to low, cover, and let simmer for 15 minutes.
- In a large mixing bowl, combine cooked quinoa with diced apple, dried cranberries, walnuts, and feta cheese.
- In a separate bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
