Description

A vibrant bowl of Cranberry Apple Quinoa Salad that combines sweet and tart flavors with nutty quinoa, perfect for autumn gatherings.


Ingredients

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 large apple, diced
  • 1/2 cup dried cranberries
  • 1/4 cup chopped walnuts (optional)
  • 1/4 cup feta cheese (optional)
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • Salt and pepper to taste


Instructions

  1. Rinse quinoa under cold water for a couple of minutes.
  2. In a medium saucepan, combine rinsed quinoa and water or vegetable broth; bring to a boil.
  3. Once boiling, reduce heat to low, cover, and let simmer for 15 minutes.
  4. In a large mixing bowl, combine cooked quinoa with diced apple, dried cranberries, walnuts, and feta cheese.
  5. In a separate bowl, whisk together olive oil, apple cider vinegar, honey, salt, and pepper.
  6. Pour the dressing over the salad and toss to combine.
  7. Serve immediately or chill in the refrigerator for 30 minutes before serving.
