Description
This chicken rice with rice cooker recipe is the easiest way to get a comforting, one-pot dinner packed with flavor and done in under 45 minutes.
Ingredients
1 cup jasmine rice
1 cup chicken broth
2 boneless chicken thighs
2 garlic cloves, minced
3 slices fresh ginger
1 tsp sesame oil
Salt and pepper to taste
Optional: peas, spinach, green onions
Instructions
1. Rinse rice until water runs clear and place in rice cooker
2. Add broth, garlic, ginger, and sesame oil
3. Season chicken and lay on top of rice without stirring
4. Close lid and start white rice cycle
5. Add vegetables in last 5 minutes if using
6. Let rest 5 minutes, fluff rice, slice chicken, and serve
Notes
Use low-sodium broth to control seasoning
Brown rice requires more liquid and time
Leftovers store well for 3 days
