Description
A flavorful and easy chicken recipe rice cooker dinner made with broth, spices, and juicy boneless chicken. Perfect for busy nights.
Ingredients
1 cup jasmine rice, rinsed
1 1/4 cups low-sodium chicken broth
2 boneless skinless chicken thighs (or breasts, sliced)
1 tbsp coconut aminos or soy sauce
1 tsp garlic powder
1/2 tsp onion powder
1/4 tsp ground ginger
1 tsp avocado or sesame oil
Optional: frozen peas, diced carrots, 1 raw egg
Instructions
1. Rinse rice until water runs mostly clear. Drain well.
2. Add rice to rice cooker along with chicken broth, soy sauce, garlic powder, onion powder, and ginger.
3. Lay chicken on top in a single layer. Drizzle with oil.
4. Close lid and set to white rice or normal cook mode.
5. Once cooked, check that chicken reaches 165°F. Let sit on warm setting 5–10 minutes.
6. Optional: stir in vegetables or crack a raw egg, then cover again to steam.
7. Fluff rice, slice chicken if needed, and serve warm.
Notes
Use bone broth for deeper flavor.
Marinate chicken 15 minutes for extra tenderness.
Add egg at the end for a soft-set texture.
Double the recipe to serve a larger family.
