Description

This creamy and comforting chicken divan in slow cooker is a fuss-free family dinner classic with tender chicken, broccoli, and a cheesy sauce.


Ingredients

2 lbs boneless, skinless chicken breasts or tenderloins

3 cups broccoli florets (fresh or frozen)

2 cans (10.5 oz) condensed cream of chicken soup

1 cup shredded cheddar cheese

1/2 cup mayonnaise or sour cream

1 tsp garlic powder

1/2 tsp black pepper

1/2 tsp curry powder (optional)

1 cup cooked rice or egg noodles (for serving)

1 cup crushed Ritz crackers or breadcrumbs (for topping)


Instructions

1. Place chicken in the bottom of your 4–6 quart slow cooker.

2. Top with broccoli florets.

3. In a separate bowl, mix together soup, mayo or sour cream, cheese, and seasonings.

4. Pour the sauce mixture over the chicken and broccoli.

5. Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.

6. If using frozen chicken, cook on LOW for at least 8 hours.

7. Add cooked rice during the last 30 minutes, or serve separately.

8. Add crunchy topping just before serving or broil for 3–5 minutes if desired.

9. Serve hot and enjoy!

Notes

Add curry powder for extra depth, or use Greek yogurt for a lighter version.

To freeze, assemble uncooked ingredients in a bag and freeze flat; cook from frozen on LOW.

Leftovers keep well in the fridge for 3 days and in the freezer for up to 3 months.
