Description

Ingredients

  • 1 tsp Salt
  • 1.5 tsp Almond extract
  • 1.5 tsp Vanilla extract
  • 0.5 tsp Cherry extract or emulsion
  • 0.5 cup Maraschino cherries (drained and chopped)
  • 1 cup Pecans (finely ground)
  • 4.5 cups All-purpose flour
  • 0.75 cup Mini chocolate chips (semi-sweet recommended)
  • 1.5 cups Powdered sugar (for rolling)


Instructions

  1. Cream together butter, powdered sugar, and granulated sugar until light and fluffy.
  2. Sprinkle in salt and add almond, vanilla, and cherry extracts; mix well.
  3. Fold in chopped maraschino cherries and ground pecans until evenly distributed.
  4. Gradually incorporate all-purpose flour until a soft dough forms.
  5. Fold in mini chocolate chips.
  6. Chill dough in the refrigerator for 30–60 minutes.
  7. Preheat oven to 350°F (175°C).
  8. Scoop about 1.5 tablespoons of dough and roll into balls; place on lined baking sheets.
  9. Bake for 15–17 minutes until lightly golden.
  10. Roll warm cookies in powdered sugar; let cool completely and roll again before serving.

Notes

For nut-free cookies, omit pecans and replace with sunflower seeds. Experiment with different extracts or dried fruits for seasonal variations.
