- 0.75 cup Mini chocolate chips (semi-sweet recommended)
- 1.5 cups Powdered sugar (for rolling)
Instructions
- Cream together butter, powdered sugar, and granulated sugar until light and fluffy.
- Sprinkle in salt and add almond, vanilla, and cherry extracts; mix well.
- Fold in chopped maraschino cherries and ground pecans until evenly distributed.
- Gradually incorporate all-purpose flour until a soft dough forms.
- Fold in mini chocolate chips.
- Chill dough in the refrigerator for 30–60 minutes.
- Preheat oven to 350°F (175°C).
- Scoop about 1.5 tablespoons of dough and roll into balls; place on lined baking sheets.
- Bake for 15–17 minutes until lightly golden.
- Roll warm cookies in powdered sugar; let cool completely and roll again before serving.
Notes
For nut-free cookies, omit pecans and replace with sunflower seeds. Experiment with different extracts or dried fruits for seasonal variations.
