- 1 1/2 cups shredded cheddar cheese

Instructions
- Preheat your oven to 400°F (200°C).
- Rinse the baby potatoes under cool water and cut them in half or quarters.
- Slice the smoked sausage into 1/4-inch rounds.
- In a small bowl, mix together the ranch seasoning, garlic powder, onion powder, and black pepper.
- In a large mixing bowl, combine the potatoes with olive oil and half of the ranch seasoning mix.
- Line a baking sheet with parchment paper or grease it lightly.
- Spread the seasoned potatoes in a single layer on the baking sheet.
- Scatter the smoked sausage slices over the potatoes.
- Roast in the preheated oven for 35-40 minutes, stirring halfway through.
- Sprinkle shredded cheddar cheese over the roasted potatoes and sausage, then return to the oven for an additional 5 minutes.
- Garnish with chopped parsley and serve with sour cream if desired.
