Description
Soft, moist carrot cake bars with warm spices and creamy frosting—perfect for everyday snacking or special occasions.
Ingredients
1 cup grated carrots
2 large eggs
1/2 cup brown sugar
1/4 cup granulated sugar
1/2 cup melted butter or coconut oil
1 tsp vanilla extract
1 cup all-purpose flour
1 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
Optional: 1/4 cup chopped nuts or raisins
Frosting: 1/2 cup cream cheese, 2 tbsp butter, 1/2 cup powdered sugar, 1/2 tsp vanilla
Instructions
1. Preheat oven to 350°F and line an 8×8 or 9×9 pan with parchment paper or lightly grease.
2. In a bowl, mix eggs, sugars, melted butter, and vanilla until smooth.
3. Add flour, baking powder, cinnamon, and salt. Stir gently until just combined.
4. Fold in grated carrots and any optional mix-ins.
5. Spread batter into prepared pan and smooth the top.
6. Bake for 25 to 28 minutes until the center springs back lightly.
7. Cool completely before frosting.
8. For frosting, beat cream cheese, butter, powdered sugar, and vanilla until smooth. Spread over cooled bars and slice.
Notes
Store bars in an airtight container for up to 3 days or refrigerate for 5 days.
Freeze unfrosted bars individually for up to 2 months.
Use gluten-free flour for a GF option.
