Description

A comforting pasta dish featuring sweet caramelized onions and a kick of chilli oil.


Ingredients

  • 200g pasta (spaghetti, penne, or fettuccine)
  • 2 large onions, thinly sliced
  • 3 tablespoons olive oil
  • 2 tablespoons chilli oil
  • Salt, to taste
  • Pepper, to taste
  • Grated Parmesan cheese (optional)
  • Fresh parsley, chopped (for garnishing)


Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add sliced onions and a pinch of salt, cooking until caramelized (20-25 minutes).
  3. Stir in the chilli oil and mix well with the onions.
  4. Add the cooked pasta to the skillet, tossing to combine.
  5. Season with salt and pepper, and serve in a bowl topped with grated Parmesan and fresh parsley.
