Description

Indulge in the comforting warmth of these Brown Butter Sage Dinner Rolls infused with the richness of brown butter and aromatic sage, perfect for gatherings or cozy dinners.

Ingredients

Scale
  • 1/2 cup (8 Tbsp; 113g) unsalted butter, cut into 8 pieces
  • 3/4 cup (180ml) whole milk or buttermilk, warmed to about 110°F (43°C)
  • 2 and 1/4 teaspoons Platinum Yeast from Red Star instant yeast (1 standard packet)
  • 3 Tablespoons (64g) honey, divided
  • 1 large egg, at room temperature
  • 1 teaspoon salt
  • 2 teaspoons fresh chopped sage leaves, plus an extra pinch for topping
  • 1 teaspoon fresh thyme leaves
  • 3 cups (390g) bread flour (spooned & leveled), plus more as needed
  • Optional: flaky sea salt, for finishing

Instructions

  1. Brown the butter in a light-colored skillet over medium heat until golden brown and nutty.
  2. Activate the yeast by combining warmed milk or buttermilk with yeast and 1 tablespoon of honey for 5-10 minutes.
  3. In a large mixing bowl, combine the activated yeast mixture, remaining honey, egg, salt, brown butter, chopped sage, and thyme. Mix until blended.
  4. Slowly add the flour until a shaggy dough forms, then knead for 8-10 minutes until smooth and elastic.
  5. Place the kneaded dough in a greased bowl, cover, and allow it to rise in a warm place for 1-1.5 hours until doubled in size.
  6. Punch down the dough, shape into small rolls, and place them in a greased baking dish. Let them rise again for 30 minutes.
  7. Preheat the oven to 375°F (190°C). Sprinkle a pinch of sage and flaky sea salt on top of the rolls.
  8. Bake for 15-20 minutes until golden brown and enjoy!

Notes

These rolls can be flavored differently — consider adding cheese, herbs, or seasonal ingredients for variety.
