- 2 medium sweet potatoes
- 4 slices of bacon
- 4 large eggs
- 1 cup shredded cheese (cheddar or your choice)
- Salt and pepper, to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes thoroughly and pierce each potato several times with a fork.
- Place the sweet potatoes on a baking dish and bake for 45 minutes until tender.
- Meanwhile, cook the bacon in a skillet over medium heat until crispy. Crumble and set aside.
- In the same skillet, crack in the eggs and cook to your desired doneness, seasoning with salt and pepper.
- Once the sweet potatoes are done, cut each in half lengthwise and scoop out some of the flesh.
- Fill the sweet potato halves with crumbled bacon, cooked eggs, and shredded cheese.
- Return the filled potatoes to the oven for 5 to 10 minutes until the cheese is melted.
- Serve warm and enjoy!
