Description

A cozy and hearty breakfast featuring baked sweet potatoes filled with crispy bacon, fluffy eggs, and melted cheese.


Ingredients

  • 2 medium sweet potatoes
  • 4 slices of bacon
  • 4 large eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • Salt and pepper, to taste
  • Olive oil for cooking


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly and pierce each potato several times with a fork.
  3. Place the sweet potatoes on a baking dish and bake for 45 minutes until tender.
  4. Meanwhile, cook the bacon in a skillet over medium heat until crispy. Crumble and set aside.
  5. In the same skillet, crack in the eggs and cook to your desired doneness, seasoning with salt and pepper.
  6. Once the sweet potatoes are done, cut each in half lengthwise and scoop out some of the flesh.
  7. Fill the sweet potato halves with crumbled bacon, cooked eggs, and shredded cheese.
  8. Return the filled potatoes to the oven for 5 to 10 minutes until the cheese is melted.
  9. Serve warm and enjoy!
