- 1 1/2 cups heavy whipping cream (360 ml)
- 1/4 cup powdered sugar (30 grams)
- 1 teaspoon vanilla extract
- Fresh blackberries for garnish
- Edible flowers for decoration
- Dark chocolate shavings for garnish
- Cocoa powder for dusting
Instructions
- Preheat oven to 350°F (175°C) and grease two 8-inch or 9-inch round cake pans.
- In a mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, whisk the eggs, oil, buttermilk, and vanilla together.
- Combine the wet ingredients with the dry ingredients, then add hot water gradually until just combined.
- Pour the batter evenly into prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
- Let the cakes cool on a wire rack.
- For the filling, combine blackberries and sugar in a saucepan over medium heat until they soften, then stir in cornstarch slurry and lemon juice.
- Allow filling to cool.
- Whip heavy cream, powdered sugar, and vanilla until soft peaks form.
- Assemble the cake by layering one cake, topping with blackberry filling, and then adding the second layer.
- Frost the top with whipped cream and decorate with blackberries, edible flowers, chocolate shavings, and cocoa powder.
- Chill the cake in the refrigerator for at least one hour before serving.
Notes
For variations, you can use seasonal fruits, add espresso powder for a mocha flavor, or use cream cheese frosting instead of whipped cream.
