Description

A dark, lush dessert that combines rich chocolate with tart blackberries for an indulgent treat perfect for any occasion.


Ingredients

  • 1 1/2 cups granulated sugar (300 grams)
  • 3/4 cup unsweetened cocoa powder (75 grams)
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda

  • 3 large eggs
  • 3/4 cup vegetable oil (180 ml)
  • 1 cup buttermilk (240 ml)
  • 2 teaspoons vanilla extract
  • 1/2 cup hot water (120 ml)
  • 1 1/2 cups fresh or frozen blackberries (225 grams)
  • 1/4 cup granulated sugar (50 grams)
  • 2 tablespoons cornstarch mixed with 2 tablespoons water
  • 1 tablespoon lemon juice
  • 1 1/2 cups heavy whipping cream (360 ml)
  • 1/4 cup powdered sugar (30 grams)
  • 1 teaspoon vanilla extract
  • Fresh blackberries for garnish
  • Edible flowers for decoration
  • Dark chocolate shavings for garnish
  • Cocoa powder for dusting


Instructions

  1. Preheat oven to 350°F (175°C) and grease two 8-inch or 9-inch round cake pans.
  2. In a mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk the eggs, oil, buttermilk, and vanilla together.
  4. Combine the wet ingredients with the dry ingredients, then add hot water gradually until just combined.
  5. Pour the batter evenly into prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  6. Let the cakes cool on a wire rack.
  7. For the filling, combine blackberries and sugar in a saucepan over medium heat until they soften, then stir in cornstarch slurry and lemon juice.
  8. Allow filling to cool.
  9. Whip heavy cream, powdered sugar, and vanilla until soft peaks form.
  10. Assemble the cake by layering one cake, topping with blackberry filling, and then adding the second layer.
  11. Frost the top with whipped cream and decorate with blackberries, edible flowers, chocolate shavings, and cocoa powder.
  12. Chill the cake in the refrigerator for at least one hour before serving.

Notes

For variations, you can use seasonal fruits, add espresso powder for a mocha flavor, or use cream cheese frosting instead of whipped cream.
