- 5-6 medium sweet potatoes, peeled & cut into thin medallions
- ¼ cup unsalted butter
- ¼ cup brown sugar (light or dark)
- ½ cup water
- 1 teaspoon ground cinnamon
- 1 teaspoon ground cloves
- 1 teaspoon ground nutmeg
- ¼ teaspoon salt
- ¼ cup chopped pecans (or walnuts)
- ½ cup mini marshmallows
Instructions
- Preheat your oven to 400°F.
- Peel and slice sweet potatoes into thin medallions and arrange them in a baking dish.
- Melt unsalted butter in a saucepan and stir in brown sugar, water, cinnamon, cloves, nutmeg, and salt.
- Brush three-quarters of the sauce over sweet potatoes, cover with aluminum foil, and bake for 45-50 minutes.
- After baking, remove foil, drizzle remaining sauce over sweet potatoes, and sprinkle with pecans and marshmallows.
- Broil in the oven for 1-2 minutes until marshmallows are golden brown.
- Allow to cool for 10-15 minutes before serving.
Notes
Feel free to experiment with spices or add citrus zest for a flavor twist.
