  • 4 bone-in, skin-on chicken thighs
  • 4 bone-in, skin-on chicken drumsticks
  • 4 tablespoons olive oil
  • 3 tablespoons fresh lime juice
  • 6 garlic cloves, minced
  • 1 tablespoon ground cumin
  • 1 tablespoon smoked paprika
  • 2 teaspoons oregano
  • 2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 1 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup fresh cilantro (packed)
  • 1/4 cup fresh parsley
  • 2 jalapeños (seeds removed for less heat)
  • 2 garlic cloves
  • 1 tablespoon fresh lime juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt


Instructions

  1. Marinate the chicken: In a large mixing bowl, whisk together olive oil, lime juice, minced garlic, cumin, smoked paprika, oregano, kosher salt, and black pepper. Add the chicken and toss to coat. Cover and marinate for at least 4 hours or overnight.
  2. Preheat the oven: Preheat your oven to 425°F (220°C) and line a baking sheet with aluminum foil or parchment paper.
  3. Prepare the chicken: If using, place a wire rack on the baking sheet. Arrange marinated chicken skin-side up on the rack.
  4. Roast the chicken: Roast in the preheated oven for 40 to 45 minutes or until the internal temperature reaches 165°F (74°C). Broil for the last 3 minutes for extra crispness.
  5. Make the creamy green sauce: In a blender, combine mayonnaise, sour cream, cilantro, parsley, jalapeños, garlic, lime juice, olive oil, and salt. Blend until smooth.
  6. Serve: Let the chicken rest before serving. Plate with a bowl of creamy green sauce for dipping or drizzling.

Notes

For extra flavor, marinate the chicken overnight. Adjust the creamy green sauce to your spice preference by adding more or less jalapeño.
