- 1/2 cup orange juice
- 1/4 cup lime juice
- 3 tablespoons olive oil
- 3-4 garlic cloves, minced
- 1 tablespoon achiote powder
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon dried oregano
- 2 teaspoons sea salt or kosher salt
- 1/2 teaspoon ground black pepper
- 3 pounds chicken thighs, legs, and/or breasts
- Lime wedges, for garnish
- Chopped cilantro, for garnish
Instructions
- Mix the marinade by combining orange juice, lime juice, olive oil, garlic, achiote powder, cumin, coriander, oregano, sea salt, and black pepper in a mixing bowl.
- Marinate the chicken by pouring the marinade over the chicken pieces in a baking dish, then cover and refrigerate for at least one hour or overnight.
- Preheat the grill to medium-high heat for gas or prepare charcoal for indirect cooking.
- Grill the chicken, boneless pieces for 6-7 minutes per side, and bone-in pieces for 10-12 minutes per side until the internal temperature reaches 165°F.
- Let the chicken rest for five minutes before serving. Garnish with lime and cilantro, and serve with lime wedges.
Notes
For best results, marinate the chicken overnight to enhance flavors. Experiment with different marinades and sides for variety.
