- 1/2 cup granulated sugar
- 1/4 cup softened butter
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/4 teaspoon salt
- 1/2 cup frangipane (optional for a soft center)
- Sliced almonds (for topping)
- Powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the egg, vanilla extract, and almond extract until well combined.
- Gradually fold in the almond flour and salt, and mix until a moist dough forms. Optionally, add in the frangipane.
- Using a cookie scoop or tablespoon, portion out the dough onto a lined baking sheet.
- Press a sliced almond into the top of each cookie.
- Bake for 10-12 minutes, until the edges are golden.
- Let cool on the sheet briefly, then transfer to a cooling rack and dust with powdered sugar before serving.
