Ingredients

  • 1/2 cup granulated sugar
  • 1/4 cup softened butter
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/4 teaspoon salt
  • 1/2 cup frangipane (optional for a soft center)
  • Sliced almonds (for topping)
  • Powdered sugar (for dusting)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Beat in the egg, vanilla extract, and almond extract until well combined.
  4. Gradually fold in the almond flour and salt, and mix until a moist dough forms. Optionally, add in the frangipane.
  5. Using a cookie scoop or tablespoon, portion out the dough onto a lined baking sheet.
  6. Press a sliced almond into the top of each cookie.
  7. Bake for 10-12 minutes, until the edges are golden.
  8. Let cool on the sheet briefly, then transfer to a cooling rack and dust with powdered sugar before serving.
