Ingredients

  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups chopped kale or spinach
  • 1 cup frozen peas
  • 2 cups cooked rice or mashed potatoes (for serving)


Instructions

  1. Heat a large skillet or Dutch oven over medium heat and add ground beef or turkey. Cook until browned and cooked through, then drain excess fat.
  2. Add chopped onion and cook until translucent (3-5 minutes).
  3. Add minced garlic, diced carrots, and celery. Cook for an additional 5 minutes.
  4. Pour in diced tomatoes, broth, and Worcestershire sauce. Stir in thyme, oregano, salt, and pepper, and bring to a gentle boil.
  5. Reduce heat and let simmer for about 20 minutes until vegetables are tender.
  6. Stir in chopped kale or spinach and frozen peas, and simmer for an additional 5 minutes.
  7. Serve over a bed of warm rice or with creamy mashed potatoes.
