- 3 medium carrots, diced
- 2 celery stalks, diced
- 1 can (14.5 oz) diced tomatoes (with juice)
- 1 cup beef or vegetable broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups chopped kale or spinach
- 1 cup frozen peas
- 2 cups cooked rice or mashed potatoes (for serving)
Instructions
- Heat a large skillet or Dutch oven over medium heat and add ground beef or turkey. Cook until browned and cooked through, then drain excess fat.
- Add chopped onion and cook until translucent (3-5 minutes).
- Add minced garlic, diced carrots, and celery. Cook for an additional 5 minutes.
- Pour in diced tomatoes, broth, and Worcestershire sauce. Stir in thyme, oregano, salt, and pepper, and bring to a gentle boil.
- Reduce heat and let simmer for about 20 minutes until vegetables are tender.
- Stir in chopped kale or spinach and frozen peas, and simmer for an additional 5 minutes.
- Serve over a bed of warm rice or with creamy mashed potatoes.
